Apizza Scholls - Apizza of Truffle Perfection

There are many urban stories about how wonderful the pizza is at Apizza Scholls.  Nay, legend.  I first heard of this place when I moved back to Portland six years ago.  It was the place that always had a line around the block almost an hour before opening each and every night.  It is the place where you actually eat all the crust- it is that good.

I'm sharing this with you due to my my near obsession with truffles. The pizza they mention on their menu is the result of many iterations on perfecting a mushroom and truffle pizza. It is called the Tartufo2 The Electric Boogaloo.  Mozzarella (whole milk & fresh), Ricotta, mushrooms, grana padano, with Truffle Oil and sea salt. It is amazing, however, I tend to like the more simple variety of truffle madness.

If you know to ask, you can order the old school truffle pizza.  It is sans the ricotta and perhaps other things I am not aware of.  It is the truffle pizza in its simplest and perfect form.  I choose to order this the other night with mushrooms.  I was not disappointed.  Dinner was quiet for probably twenty minuets as my family ate an entire one down to the crumbs.  The only sound was moans of pleasure and grunts of approvals :)
